Henny is the Head of Biology, Planning and ESG at Måsøval, and is happy to share her recipe for the good, old classic: scrambled eggs with smoked salmon. Simple, straightforward, and fantastically delicious!
Ingredients
- Approx. 2 eggs per person
- Dairy butter
- Salt and pepper to taste
- Good quality smoked salmon in slices (preferably from Garnviks Røkeri)
- Chopped chives
- Good bread

Henny’s method
Melt a generous knob of butter over medium heat in a small saucepan, preferably non-stick. Lightly whisk the eggs in a bowl before pouring them into the saucepan with the melted butter. Use a spatula and stir the eggs gently all the time. Scrape the bottom of the saucepan well. When the mixture begins to thicken, remove the saucepan from the heat. Better a little too early than too late! The residual heat will take care of the finish. Finally, mix in chives, salt, and pepper.
Spread the scrambled eggs on the bread and top with delicious smoked salmon!
